Ingredients
- 2 fish (12 oz each) whole sea bream (or porgy), cleaned and scaled
- 3 tbsp olive oil
- 1.5 whole lemon
- 2 tbsp fresh parsley or dill, chopped
- ½ tsp salt
- ¼ tsp black pepper

Pat fish dry with paper towels inside and out. Score the thickest part of the fish 2-3 times on each side.

Brush fish inside and out with olive oil. Season generously with salt and pepper, then sprinkle herbs inside the cavity.

Heat grill to medium-high (or heat a cast iron skillet over medium-high until smoking). Oil the grate lightly.

Grill fish 5–6 minutes per side without moving — skin should blister and char, flesh should flake at the thickest point.

Transfer to a plate. Slice lemon into thin rounds and serve alongside the fish.
