- 2 medium bell pepper
- 1 large red onion
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp salt

Soak 8 wooden skewers in water for 20 minutes. Cut the 1.5 lb sausage into 1-inch chunks, the 2 bell peppers into 1-inch pieces, and the 1 onion into wedges.

In a large bowl, toss the sausage, peppers, and onion with the 2 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper until evenly coated.

Thread the sausage, peppers, and onion onto the skewers, alternating pieces and leaving a small gap between each.

Preheat a grill or grill pan to medium-high heat. Place the skewers on the grill and cook, turning occasionally, until the sausage is browned and the vegetables are tender with charred edges, about 10-12 minutes.
