Ingredients
- 1 lb ribeye steak
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp butter
- 2 sprigs fresh thyme

Pat the 1 lb ribeye steak dry with paper towels. Rub both sides with 1 tbsp olive oil, then season generously with 1 tsp salt and 1/2 tsp black pepper.

Heat a grill or grill pan over high heat until smoking. Place the steak on the grill and cook for 4-5 minutes without moving, until a dark crust forms.

Flip the steak and add 1 tbsp butter and 2 sprigs of fresh thyme on top. Cook for another 4-5 minutes for medium-rare, or until the internal temperature reaches 130°F.

Remove the steak from the grill and let it rest for 5 minutes on a cutting board. Slice against the grain and serve with the pan juices.
