Ingredients

  • 8 oz provolone cheese
  • 4 oz cooked sausage (like chorizo or salami)
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp fresh parsley

    Cut the 8 oz provolone into 1/2-inch thick slices. Slice the 4 oz sausage into thin rounds.

    Heat a cast-iron or nonstick skillet over medium-high heat. Brush the cheese slices with the 1 tbsp olive oil on both sides.

    Place the cheese in the hot skillet and cook until the bottom is golden and bubbly, about 2-3 minutes. Flip carefully and cook the other side until melted and browned, another 2 minutes.

    Transfer the cheese to a cutting board. Top with the sausage slices, sprinkle with the 1 tbsp parsley, and serve with the 2 tbsp Dijon mustard on the side for dipping.
