Ingredients
- 6 whole sardines, fresh (cleaned, gutted)
- 2 tbsp olive oil
- 1 tsp coarse sea salt
- ¼ tsp black pepper
- 1 whole lemon
Instructions

Pat sardines dry inside and out with paper towels.

Rub both sides lightly with olive oil, then season generously with coarse salt and black pepper.

Heat a grill pan or cast iron skillet over medium-high until it smokes lightly, ~2 minutes.

Lay sardines on the grill. Cook 3 minutes without moving until skin chars and crisps.

Flip gently and cook 2 more minutes until the flesh is opaque and just cooked through.

Slide onto a plate and squeeze fresh lemon juice over the top. Serve immediately.
