Ingredients

  • 1.5 lb pork ribs
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic
  • 1 cup rice
  • 1 medium carrot
  • 2 cups broccoli
  • 1 whole lime

Instructions

    In a bowl, mix 3 tbsp fish sauce, 2 tbsp brown sugar, and 3 minced garlic cloves. Add 1.5 lb pork ribs and coat well. Marinate for at least 30 minutes, or up to overnight.

    While ribs marinate, cook 1 cup rice according to package directions. Set aside.

    Preheat grill or grill pan to medium-high. Grill ribs for 6-8 minutes per side, until charred and cooked through (internal temp 145°F).

    Meanwhile, slice 1 carrot into thin strips and cut 2 cups broccoli into florets. Steam or sauté in a pan with a splash of water until tender-crisp, about 5 minutes.

    For the dipping sauce, squeeze the juice of 1 lime into a small bowl and stir in 1 tbsp of the leftover marinade (if you have it) or a pinch of salt and sugar.

    Serve ribs over rice with vegetables and the dipping sauce on the side. Enjoy hot.
