Ingredients
- 1 lb pork shoulder or loin
- 8 oz vermicelli noodles
- 4 cups lettuce
- 1 cup fresh herbs (mint, cilantro)
- ¼ cup peanuts
- 3 tbsp chili sauce
- 2 tbsp fish sauce
- 1 whole lime

Slice the 1 lb pork into thin strips and marinate with 2 tbsp fish sauce and juice of 1 lime for 10 minutes.

Cook the 8 oz vermicelli noodles according to package, then rinse with cold water and drain well.

Grill or pan-sear the pork over medium-high heat until charred and cooked through, about 3-4 minutes per side.

Toss the 4 cups lettuce and 1 cup herbs with the noodles and divide among bowls.

Top with the grilled pork, 0.25 cup peanuts, and drizzle with 3 tbsp chili sauce. Serve immediately.
