Grilled Pineapple

Ingredients
- 1 whole ripe pineapple
- 2 tbsp brown sugar
- 1 whole lime
- ½ tsp ground cinnamon
- 1 tbsp vegetable oil

Slice off the top and bottom of the pineapple, then stand it upright and cut away the skin. Remove any remaining eyes with a paring knife.

Cut the pineapple into 0.75 inch thick rings. Use a small cookie cutter or knife to remove the core from each ring, if desired.

In a small bowl, mix the 2 tbsp brown sugar, 0.5 tsp cinnamon, and the zest of the lime. Set aside.

Preheat your grill to medium-high heat (about 400°F). Brush the pineapple rings with the 1 tbsp vegetable oil on both sides.

Grill the pineapple rings for 3-4 minutes per side, until they have nice grill marks and are slightly softened, but still hold their shape.

During the last minute of grilling, sprinkle the brown sugar mixture over the rings, pressing gently so it sticks.

Remove the pineapple from the grill and squeeze the lime juice over the top. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of yogurt.
