Ingredients
- 1.5 lb cremini mushrooms
- ¼ cup olive oil
- 3 cloves garlic
- ¼ cup fresh parsley
- 1 tbsp fresh thyme
- 1 tsp salt
- ½ tsp black pepper

Clean the 1.5 lb mushrooms with a damp paper towel and trim the stems. Leave small mushrooms whole, halve larger ones so they cook evenly.

In a small bowl, combine the 1/4 cup olive oil, 3 minced garlic cloves, 1/4 cup chopped parsley, 1 tbsp chopped thyme, 1 tsp salt, and 1/2 tsp black pepper. Stir to make a herb oil.

Toss the mushrooms in the herb oil until well coated. Let them marinate at room temperature for 15 minutes so the flavors soak in.

Preheat a grill or grill pan to medium-high heat. The grill is ready when you can hold your hand 5 inches above the grate for only 3 seconds.

Place the mushrooms on the grill in a single layer, cut-side down. Grill without moving for 4-5 minutes, until grill marks appear and they release easily.

Flip the mushrooms and grill the other side for 3-4 minutes, until tender and lightly charred. They should feel springy when pressed.

Transfer the grilled mushrooms to a serving platter. Drizzle with any remaining herb oil and sprinkle with extra parsley if desired. Serve hot.
