Ingredients

  • 2 links (about 12 oz) kielbasa or smoked sausage
  • 1 medium, sliced into thin rings red onion
  • 2 whole hot dog buns
  • ½ cup dill pickle chips
  • 3 tbsp yellow mustard
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar or white vinegar

Instructions

  1. 1

Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

  2. 2

Add onions, cook stirring occasionally until caramelized and dark golden, 8–10 minutes.

  3. 3

While onions cook, slice kielbasa on the bias into 1/2-inch-thick coins.

  4. 4

Push onions to the side of the pan; add kielbasa coins in a single layer, let them sear 90 seconds.

  5. 5

Stir kielbasa with onions, then drizzle vinegar over everything and toss to coat.

  6. 6

Toast buns in the warm skillet 30 seconds per side until light golden, then fill each with kielbasa, onions, pickles, and mustard.
