Ingredients
- 1.5 lbs pulled pork, shredded
- 6 count slider buns
- ½ cup barbecue sauce
- 2 cups coleslaw mix (shredded cabbage + carrots)
- 3 tbsp apple cider vinegar
- 1 lb russet potatoes, cut into fries
- ¼ cup mayonnaise
- ¼ cup ketchup
Instructions
- 1
Toss coleslaw mix with apple cider vinegar and a pinch of salt until just wilted, about 2 minutes. Set aside.
- 2
Heat 2 tbsp oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.
- 3
Spread potatoes in a single layer in the skillet. Don't stir for 4 minutes until the bottoms turn golden.
- 4
Toss fries and cook another 4–5 minutes, stirring occasionally, until crispy and golden all over.
- 5
While fries finish, warm pulled pork and barbecue sauce in a separate bowl or in a small saucepan over low heat, stirring gently for 3 minutes until heated through.
- 6
Toast slider buns cut-side down in the skillet for 90 seconds until lightly golden and crisp.
- 7
Pile each bun with a generous scoop of barbecue pulled pork, top with a spoonful of slaw, and serve with fries, ketchup, and mayo on the side.
