Ingredients

  • 4 filets white fish fillets
  • 1 cup long-grain white rice
  • 4 cups frozen french fries
  • 1 medium tomato
  • 2 cups lettuce
  • 1 medium lemon
  • 2 tbsp olive oil
  • 1 tsp salt

    Preheat oven to 425°F. Spread the 4 cups frozen french fries in a single layer on a baking sheet and bake until golden and crispy, about 20-25 minutes, shaking the pan halfway.

    While fries bake, rinse the 1 cup rice in a fine-mesh strainer. In a small pot, bring 2 cups water to a boil, add rice and 1/2 tsp salt, reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 15-18 minutes.

    Pat the 4 fish fillets dry and season both sides with remaining 1/2 tsp salt. Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.

    Place fish in the hot skillet and cook until golden brown and opaque, about 3-4 minutes per side, flipping once. The fish should flake easily with a fork when done.

    Slice the 1 tomato and tear the 2 cups lettuce. Cut the 1 lemon into wedges.

    Divide rice, fries, and fish among plates. Serve with tomato, lettuce, and lemon wedges for squeezing over the fish.
