Ingredients
- 1 whole whole fish (gutted, scaled)
- 1 cup fresh herbs (cilantro, mint, basil)
- ½ cup roasted peanuts
- 1 whole lime
- 2 tbsp fish sauce
- 1 medium cucumber

Preheat grill to medium-high. Rinse the 1 whole fish and pat dry. Season inside and out with salt and pepper.

Stuff the cavity with half of the 1 cup fresh herbs. Wrap fish in aluminum foil, sealing tightly.

Grill the wrapped fish for 10-12 minutes, until flesh flakes easily with a fork. Carefully open foil to let steam escape.

Meanwhile, make sauce: mix juice of 1 lime, 2 tbsp fish sauce, and 1 tsp sugar (if you have it) in a small bowl. Stir in remaining herbs and 0.5 cup peanuts.

Serve fish with steamed rice, sliced cucumber, and sauce on the side. Sprinkle extra peanuts on top if desired.
