Grilled Fish with Herb Butter
A simple, elegant weeknight dinner: flaky grilled fish fillets topped with a bright, herby butter sauce and a squeeze of lemon.

Ingredients
- 4 filets fish fillets
- 4 tbsp butter
- 2 tbsp fresh parsley
- 1 tbsp fresh dill
- 1 whole lemon
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Pat the 4 fish fillets dry and season both sides with the 1 tsp salt and 1/2 tsp black pepper.

In a small bowl, mash the 4 tbsp softened butter with the 2 tbsp chopped parsley and 1 tbsp chopped dill. Set aside.

Heat a grill or grill pan over medium-high heat and brush the grates with the 1 tbsp olive oil.

Place the fillets on the grill and cook until they have nice grill marks and are opaque, about 4-5 minutes per side.

Remove the fish to a plate and immediately top each fillet with a spoonful of the herb butter.

Squeeze the juice of the 1 lemon over the fish and serve hot.

Garnish with extra herbs if you like.
