Ingredients
- 2 large chicken breast
- 2 medium bell peppers
- 1 large onion
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano

Slice the 2 bell peppers and 1 onion into 1/2-inch strips. In a large bowl, toss with 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp oregano, and a pinch of salt and pepper.

Heat a grill pan or outdoor grill over medium-high. Brush the 2 chicken breasts with the remaining 1 tbsp olive oil and season both sides with salt and pepper.

Grill the chicken for 6-7 minutes per side, until charred and cooked through (no pink in the center, internal temp 165°F). Remove and let rest.

In the same pan, add the peppers and onions. Cook, stirring occasionally, until tender and charred at the edges, about 8-10 minutes.
