Ingredients
- 1.5 lb chicken breast
- 3 tbsp olive oil
- 1 lemon
- 2 cloves garlic
- 1 tsp dried oregano
- 1 red onion
- 4 slices bread
- ¼ cup fresh parsley

Cut the 1.5 lb chicken breast into 1-inch cubes. In a bowl, mix the chicken with 2 tbsp olive oil, juice of 1 lemon, 2 minced garlic cloves, 1 tsp dried oregano, and a pinch of salt and pepper. Let marinate for 10 minutes.

Thread the chicken onto skewers, dividing evenly. Preheat a grill or grill pan over medium-high heat.

Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is charred at the edges and cooked through (no pink inside).

While the chicken cooks, brush the 4 bread slices with the remaining 1 tbsp olive oil and toast on the grill or in a toaster until golden, about 2 minutes per side.

Thinly slice the 1 red onion and chop the 1/4 cup fresh parsley. Serve the skewers over the toasted bread, topped with the onion and parsley.
