Grilled Branzino
A whole branzino grilled simply with olive oil, lemon, and parsley, served with red onion. Ready in about 20 minutes, this is a light and flavorful weeknight dinner.

Ingredients
- 1 whole whole branzino, cleaned
- 2 tbsp olive oil
- 1 whole lemon
- ½ medium red onion
- ¼ cup fresh parsley
- 1 tsp salt

Pat the 1 whole branzino dry with paper towels. Score the skin 3 times on each side, then rub all over with 1 tsp salt and 1 tbsp of the olive oil.

Heat a grill or grill pan over medium-high. Grill the fish for 5-6 minutes per side, until the skin is charred and the flesh flakes easily with a fork.

While the fish cooks, thinly slice the 1/2 red onion and chop the 1/4 cup parsley. Cut the 1 lemon into wedges.

Transfer the grilled fish to a plate. Scatter with the sliced red onion and chopped parsley, and serve with the lemon wedges for squeezing over.

Drizzle with the remaining 1 tbsp olive oil just before serving, if desired.
