Ingredients

  • 1 lb boerewors (pork sausage coil)
  • 1 lb boneless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper
  • 1 whole fresh lemon or lime
  • 2 sprigs fresh thyme or oregano (optional)
  • 1 medium onion (sliced into rings)

Instructions

    Heat a grill or grill pan over medium-high heat for 3 minutes until hot and lightly smoking.

    Pat boerewors and chicken dry. Brush with olive oil, season generously with salt and pepper.

    Lay boerewors coil on grill. Cook 12–14 minutes, rolling it gently every 2–3 minutes, until charred and cooked through.

    While sausage cooks, place chicken on a separate grill area. Cook 5–7 minutes per side until edges char and juices run clear.

    Grill onion rings 3–4 minutes per side until softened and caramelized.

    Transfer to a plate. Squeeze lemon over everything and scatter fresh thyme. Serve immediately.
