Ingredients
- 1.5 lb beef steak (such as flank or sirloin)
- 3 tbsp olive oil
- 1 lime
- 1 tsp salt
- ½ tsp black pepper
- 1 head romaine lettuce
- 1 cup cherry tomatoes
- ½ cup salsa

Pat the 1.5 lb steak dry and rub with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Let sit at room temperature for 15 minutes.

Heat a grill or grill pan over high heat. Grill the steak for 4-6 minutes per side for medium-rare, until it has a nice char and feels firm but springy when pressed.

Transfer the steak to a cutting board, tent loosely with foil, and rest for 5-10 minutes.

While the steak rests, chop the 1 head of romaine and halve the 1 cup cherry tomatoes. Toss with 2 tbsp olive oil, the juice of 1 lime, and the remaining 1/2 tsp salt and 1/4 tsp pepper.

Slice the rested steak thinly against the grain.

Serve the sliced beef over the salad with the 1/2 cup salsa on the side or drizzled on top.
