Ingredients

  • 1.5 lb beef sirloin or tenderloin
  • 8 leaves banana leaves (or parchment paper)
  • ½ cup natural peanut butter (unsweetened)
  • 3 tbsp soy sauce
  • 3 cloves garlic cloves
  • 1 whole lime (juice only)

Instructions

  1. 1

Trim any visible fat from the beef and pat it dry with paper towels, which helps it cook evenly and brown better.

  2. 2

Place the beef on a cutting board and slice it against the grain into 1/4-inch-thick strips, the way you would slice bread.

  3. 3

Lay each banana leaf flat on a clean surface, or lay parchment rectangles (about 6×4 inches) in a pile nearby.

  4. 4

Mince the garlic until the pieces are smaller than a grain of rice—about the size of pencil-tip dots.

  5. 5

Squeeze the lime juice into a small bowl, collecting about 3 tablespoons of liquid, removing any seeds with your fingers.

  6. 6

In the same bowl, add the peanut butter, soy sauce, and minced garlic, then stir vigorously with a spoon until smooth and uniform.

  7. 7

Preheat your grill to medium-high heat and wait until you see smoke rising steadily, about 8 minutes.

  8. 8

Working with one beef slice at a time, lay it flat on a banana leaf, then roll the leaf tightly around the meat like you're rolling a burrito.

  9. 9

Repeat with all beef slices until you have 8 tight rolls, each one about 4 inches long and 1 inch thick.

  10. 10

Oil the grill grates by rubbing a folded paper towel dipped in oil across them, moving toward your body for safety.

  11. 11

Place each bundle seam-side down on the hot grill grates and cook without moving for 2 minutes until the banana leaf is lightly charred.

  12. 12

Flip each bundle using tongs and cook for another 2 minutes until the second side is lightly charred and the meat feels firm when pressed.

  13. 13

Transfer all bundles to a serving platter, nestling them close together in a single layer.

  14. 14

Spoon the peanut sauce into a small serving bowl or drizzle it directly over the top of the bundles in a thin stream.
