Ingredients
- 1.5 lbs beef sirloin steak (1.5 inches thick)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 whole lime (juiced)
- 2 whole white onions, halved
- 1 pinch salt and pepper to taste
- ¼ cup fresh cilantro, chopped (optional)

Mix olive oil, minced garlic, and lime juice in a bowl. Rub over both sides of the steak.

Season steak generously with salt and pepper. Let rest 10 minutes at room temperature.

Heat a cast iron skillet over medium-high heat until smoking, about 2 minutes.

Sear steak 4 minutes per side without moving. Crust should be dark brown; center stays pink.

Transfer steak to a plate. Add onion halves to the same skillet cut-side down.
