Ingredients

  • 1.5 lbs beef sirloin steak (1.5 inches thick)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 whole lime (juiced)
  • 2 whole white onions, halved
  • 1 pinch salt and pepper to taste
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

    Mix olive oil, minced garlic, and lime juice in a bowl. Rub over both sides of the steak.

    Season steak generously with salt and pepper. Let rest 10 minutes at room temperature.

    Heat a cast iron skillet over medium-high heat until smoking, about 2 minutes.

    Sear steak 4 minutes per side without moving. Crust should be dark brown; center stays pink.

    Transfer steak to a plate. Add onion halves to the same skillet cut-side down.

    Char onions 3 minutes per side until edges blacken and flesh softens.

    Let steak rest 5 minutes. Slice against the grain into 1/4-inch strips.

    Plate steak and charred onions. Drizzle any pan juices over the top. Garnish with cilantro if desired.
