Ingredients

  • 1 lb beef sirloin or tenderloin, cut into 1-inch cubes
  • 3 tbsp red wine vinegar
  • 1 tsp cumin
  • ½ tsp paprika
  • 2 cloves garlic, minced
  • 2 tbsp fresh cilantro, chopped (optional)

    Whisk vinegar, cumin, paprika, garlic, salt, and pepper in a small bowl until combined.

    Heat a grill or cast-iron skillet to high heat (very hot, ~2 minutes).
