Ingredients

  • 1.2 lb pork tenderloin
  • ¾ cup bbq sauce
  • 1 medium red onions, thinly sliced
  • 1 cup fresh berries (blueberries or raspberries)

Instructions

    Pat pork dry and season generously with salt and pepper on all sides.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork 2 min per side until browned, then roast at 400°F for 12–14 min until 145°F internal temp.

    Brush pork generously with BBQ sauce during the last 2 minutes of cooking until glossy.

    Toss sliced red onions with 2 tbsp BBQ sauce, a pinch of salt, and let sit while pork rests 5 minutes.
