Ingredients

  • 4 cups mixed salad greens
  • 2 slices bread
  • 3 tbsp olive oil
  • 4 oz cheese (such as cheddar or Swiss)
  • 1 tbsp lemon juice
  • 1 pinch salt and pepper

Instructions

    Cut the 2 bread slices into 1/2 inch cubes. Toss with 1 tbsp of the olive oil and a pinch of salt. Spread on a baking sheet and toast at 400°F for 8-10 minutes, until golden and crisp.

    In a large bowl, whisk the remaining 2 tbsp olive oil with 1 tbsp lemon juice and a pinch of salt and pepper.

    Add the 4 cups salad greens to the bowl and toss well to coat with the dressing.

    Cut the 4 oz cheese into small cubes. Top the salad with the cheese and the toasted croutons, then serve immediately.

    For extra flavor, add a sprinkle of dried herbs or a dash of garlic powder to the croutons before toasting.
