Ingredients
- 4 cups mixed salad greens
- 2 slices bread
- 3 tbsp olive oil
- 4 oz cheese (such as cheddar or Swiss)
- 1 tbsp lemon juice
- 1 pinch salt and pepper

Cut the 2 bread slices into 1/2 inch cubes. Toss with 1 tbsp of the olive oil and a pinch of salt. Spread on a baking sheet and toast at 400°F for 8-10 minutes, until golden and crisp.

In a large bowl, whisk the remaining 2 tbsp olive oil with 1 tbsp lemon juice and a pinch of salt and pepper.
