- 2 cups green papaya
- 1 cup long beans or green beans
- ¾ cup cherry tomatoes
- 2 whole dried chilies
- 3 whole garlic cloves
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- ¼ cup roasted unsalted peanuts
- ¼ cup fresh cilantro
- 2 whole shallots

Peel and julienne the green papaya into thin, matchstick-sized pieces using a knife or mandoline.

Cut the long beans into 2-inch segments and thinly slice the shallots.

Halve the cherry tomatoes and roughly chop the roasted peanuts.

Mince the garlic and remove seeds from the dried chilies for less heat, or keep them for more spice.

In a large mortar and pestle, gently pound the garlic and chilies together until fragrant, about 30 seconds.

Add the long beans and lightly bruise them to release their flavor.
