Ingredients

  • ½ lb ground beef
  • 1 tsp cumin
  • 1 can (14 oz) crushed tomatoes
  • 1 lb potatoes, quartered
  • 1 cup white rice
  • 2 tbsp red wine vinegar

Instructions

    Toss quartered potatoes with olive oil, salt, and pepper on a sheet pan. Spread in one layer and roast at 425°F.

    While potatoes roast, boil rice in 2 cups salted water until tender, about 10 minutes.

    Shape ground beef into 8–10 balls, each about the size of a walnut. Season with 1 tsp cumin, salt, and pepper.

    Heat 2 tbsp olive oil in a skillet over medium-high. Sear meatballs 2 minutes per side until golden outside.

    Pour in crushed tomatoes and 2 tbsp red wine vinegar. Simmer 5 minutes until sauce thickens slightly.

    Serve meatballs and tomato sauce alongside rice and roasted potatoes. Drizzle with extra olive oil if desired.
