Ingredients

  • 2 pieces pork chops (1.5 inches thick)
  • 1 whole lemon
  • 3 whole garlic cloves
  • 1.5 tsp dried oregano
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper

Instructions

    Mince garlic and zest the lemon. Mix garlic, zest, oregano, 2 tbsp olive oil, salt, and pepper in a small bowl.

    Pat pork chops dry. Rub the garlic-oregano mixture all over both sides and let sit 5 minutes.

    Heat 1 tbsp olive oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork chops 3 to 4 minutes per side without moving. They should be golden and an instant-read thermometer reads 145°F.

    Squeeze half a lemon over the chops. Rest 2 minutes before serving.
