Ingredients

  • 6 links (about 1.25 lbs) loukaniko (Greek pork sausages)
  • 2 tbsp olive oil
  • 1 whole (juiced) lemon
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • 1 tbsp red wine vinegar
  • ¼ tsp red pepper flakes (optional)

Instructions

    Heat olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add loukaniko and sear without moving for 3 minutes until the casing cracks and browns.

    Flip and cook another 3 minutes until cooked through and deeply browned on all sides.

    Push sausages to the side. Add minced garlic to the oil and cook for 30 seconds until fragrant.

    Pour lemon juice and vinegar over the sausages. Sprinkle with oregano and red pepper flakes.

    Toss gently for 30 seconds to coat. Serve hot with crusty bread and the pan sauce drizzled over.
