Ingredients

  • 1 lb frozen meatballs
  • 2 cans (15 oz each) canned giant beans (gigantes plaki or butter beans), drained
  • 1 can (28 oz) crushed tomatoes
  • 1.5 tsp dried oregano
  • ½ medium red onion, diced
  • 3 cloves garlic, minced

Instructions

    Heat olive oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add frozen meatballs and cook without stirring until browned on one side, about 4 minutes.

    Stir in diced red onion and minced garlic, cooking for 30 seconds until fragrant.

    Pour in crushed tomatoes and drained beans, then add oregano, salt, and pepper to taste.

    Simmer for 8–10 minutes until meatballs are cooked through and sauce thickens slightly.
