- 2 cups rolled oats
- ¼ cup honey
- 2 tbsp olive oil
- 1 tsp vanilla extract
- ¼ tsp salt
- 2 cups plain yogurt
- 1 cup blueberries

Preheat the oven to 350°F (175°C). In a large bowl, mix the 2 cups rolled oats, 1/4 cup honey, 2 tbsp olive oil, 1 tsp vanilla extract, and 1/4 tsp salt until the oats are evenly coated.

Spread the oat mixture in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes, stirring once halfway, until the granola is golden brown and fragrant.

Remove the granola from the oven and let it cool completely on the baking sheet; it will crisp up as it cools.

Divide the 2 cups plain yogurt between two bowls.
