Ingredients
- 2 cups rolled oats
- ¼ cup honey
- ¼ cup coconut oil
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup raisins
- 2 cups plain yogurt
Instructions
- 1
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- 2
In a large bowl, mix the 2 cups rolled oats, 1/4 cup honey, 1/4 cup melted coconut oil, 1 teaspoon vanilla extract, and 1/4 teaspoon salt until the oats are evenly coated.
- 3
Spread the oat mixture in a thin, even layer on the prepared baking sheet. Bake for 20-25 minutes, stirring once halfway, until the granola is golden brown and fragrant.
- 4
Remove the granola from the oven and let it cool completely on the baking sheet—it will crisp up as it cools.
- 5
Stir in the 1/2 cup raisins. Divide the 2 cups yogurt among 4 bowls and top each with a generous scoop of granola.
- 6
Serve immediately, or store the granola in an airtight container for up to a week.
