Ingredients
- 1 lb beef stew meat
- 1 large onion
- 2 cloves garlic
- 2 medium carrots
- 3 tbsp tomato paste
- 4 cups beef broth
- 2 tsp paprika
- 2 tbsp olive oil

Heat the 2 tbsp olive oil in a large pot over medium-high. Add the 1 lb beef stew meat in a single layer and sear until browned on all sides, about 6 minutes. Remove beef and set aside.

Reduce heat to medium. Add the 1 large sliced onion and cook until soft and golden, about 5 minutes. Stir in the 2 minced garlic cloves and 2 tsp paprika, cook for 1 minute until fragrant.

Stir in the 3 tbsp tomato paste and cook for 2 minutes, stirring constantly, until it darkens slightly.

Return the beef to the pot. Add the 4 cups beef broth and 2 medium diced carrots. Bring to a boil, then reduce heat to low, cover, and simmer until beef is tender, about 30 minutes.
