Ingredients

  • 1.5 cups jasmine or long-grain rice
  • 1 can (13.5 oz) coconut milk
  • 1 tsp turmeric powder
  • 4 pieces (rotisserie or store-bought) fried chicken pieces
  • 2 cups, torn romaine lettuce
  • 1 medium carrot, sliced thin

Instructions

    Rinse rice under cold water until water runs clear, about 1 minute.

    Pour coconut milk into a skillet, add 1 cup water, turmeric, salt, and pepper. Bring to a boil.

    Stir in rinsed rice, then reduce heat to low. Cover and simmer until rice is tender and liquid is absorbed, about 15 minutes.

    While rice cooks, warm the fried chicken in a second skillet over medium heat, about 4 minutes, turning once.

    Fluff the rice with a fork. Arrange on a plate with chicken, lettuce, and sliced carrots.
