Ingredients

  • 1.5 lbs yellow summer squash or zucchini, sliced 1/4-inch thick
  • 1.5 cups sharp cheddar cheese, shredded
  • ½ cup panko breadcrumbs
  • 3 tbsp butter, melted
  • ½ medium yellow onion, thinly sliced
  • 1 pinch salt and black pepper to taste

Instructions

    Preheat oven to 425°F. Toss squash slices and onion with 1.5 tbsp melted butter, salt, and pepper in a bowl.

    Spread mixture into a 9x13-inch baking dish. Scatter 1 cup cheddar evenly over the top.

    Stir panko with remaining 1.5 tbsp melted butter and remaining 0.5 cup cheddar until crumbly.

    Sprinkle panko mixture over the cheese layer until it looks golden and covered.

    Bake for 12–14 minutes until breadcrumbs turn deep golden and edges bubble slightly.
