Ingredients
- 1.5 lbs yellow summer squash or zucchini, sliced 1/4-inch thick
- 1.5 cups sharp cheddar cheese, shredded
- ½ cup panko breadcrumbs
- 3 tbsp butter, melted
- ½ medium yellow onion, thinly sliced
- 1 pinch salt and black pepper to taste

Preheat oven to 425°F. Toss squash slices and onion with 1.5 tbsp melted butter, salt, and pepper in a bowl.

Spread mixture into a 9x13-inch baking dish. Scatter 1 cup cheddar evenly over the top.

Stir panko with remaining 1.5 tbsp melted butter and remaining 0.5 cup cheddar until crumbly.
