Ingredients

  • 1 lb pork belly, sliced 1/4-inch thick
  • 3 tbsp gochujang
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 8 leaves butter lettuce or bibb lettuce leaves
  • 2 cups rice noodles, cooked
  • 1 cup pickled radishes, jalapeños, and carrots (store-bought or quick-pickled)

Instructions

    Mix gochujang, sesame oil, honey, and rice vinegar in a small bowl until smooth.

    Heat a large skillet over medium-high until smoking, about 2 minutes.

    Working in batches, sear pork belly 2–3 minutes per side until edges char and fat renders. Don't stir.

    Return all pork to the skillet, pour sauce over, and toss to coat for 1 minute until glossy and caramelized.

    Warm rice noodles if cold, arrange lettuce, pickles, and pork on a platter with noodles alongside.
