Ingredients

  • 1 lb bitter melon (ampalaya)
  • 4 cloves, minced garlic
  • 1 medium, sliced onion
  • 3 large eggs
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Halve the bitter melon lengthwise and scoop out the seeds with a spoon.

    Slice the melon crosswise into 1/4-inch crescents.

    Beat the eggs in a bowl with a pinch of salt.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high heat until it shimmers, ~90 seconds.

    Add bitter melon and sauté until soft and edges brown, ~5 minutes.

    Push melon to the side. Add remaining 1 tbsp oil and sauté garlic and onion until fragrant, ~2 minutes.

    Pour beaten eggs over the mixture and stir constantly until fully cooked, ~3 minutes.

    Season with salt and pepper to taste.

    Serve hot over rice.
