Ginger Stir-Fried Chicken

Ingredients
- 1 lb chicken breast
- 2 tbsp fresh ginger
- 3 cloves garlic
- 1 red chili pepper
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- 2 cups green leafy vegetables
- ½ tsp salt

Slice the 1 lb chicken breast into thin strips and season with 0.5 tsp salt. Set aside.

Peel and julienne the 2 tbsp ginger, mince the 3 garlic cloves, and thinly slice the 1 red chili pepper.

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering.

Add the chicken strips in a single layer and sear until golden on one side, about 2 minutes, then stir-fry until just cooked through, 3-4 minutes more. Remove and set aside.

In the same pan, add the ginger, garlic, and chili. Stir-fry until fragrant, about 30 seconds.

Return the chicken to the pan, add 2 tbsp soy sauce, and toss to coat. Cook for 1 minute until the sauce coats the chicken.

Add the 2 cups greens and stir-fry until wilted, about 1-2 minutes. Serve hot.
