Ingredients
- 1.5 lb chicken thighs, bone-in, skin-on
- 2 inch fresh ginger, sliced
- 4 stalks scallions, cut into 2-inch pieces
- 2 tbsp goji berries
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp salt
- ½ cup water

Pat the 1.5 lb chicken thighs dry and rub with 1 tsp salt. Place in a shallow heatproof dish that fits in your steamer.

Scatter 2 inches of sliced ginger, 4 scallion pieces, and 2 tbsp goji berries over the chicken. Pour 0.5 cup water around the chicken.

Set up a steamer with water boiling. Place the dish in, cover, and steam over medium-high heat until the chicken is cooked through and juices run clear, about 30 minutes.

Carefully remove the dish from the steamer. Transfer the chicken to a cutting board and let rest for 5 minutes, then slice or chop into serving pieces.

Pour the steaming juices from the dish into a small saucepan. Add 2 tbsp soy sauce and 1 tbsp sesame oil, and bring to a simmer over medium heat, about 2 minutes, until slightly reduced.
