Ingredients
- 4 links beef sausages
- 4 cups water
- 1 medium onion
- 2 cloves garlic
- 1 leaf bay leaf
- 1 teaspoon black peppercorns
- 1 teaspoon salt
- ¼ cup fresh parsley
Instructions
- 1
Peel and slice the 1 medium onion into thin rings. Peel and lightly crush the 2 garlic cloves with the flat of a knife.
- 2
In a large pot, combine the 4 cups water, sliced onion, crushed garlic, 1 bay leaf, 1 teaspoon peppercorns, and 1 teaspoon salt. Bring to a boil over high heat, then reduce to a gentle simmer.
- 3
Add the 4 sausages to the simmering broth. Ensure they are fully submerged, adding a little hot water if needed.
- 4
Simmer the sausages gently, uncovered, for 15-20 minutes until they are plump and heated through. The broth should stay at a bare simmer, not a rolling boil, to prevent the skins from splitting.
- 5
While the sausages cook, finely chop the 1/4 cup fresh parsley.
- 6
Remove the sausages from the broth with tongs and let them rest for 2-3 minutes on a cutting board.
- 7
Slice the sausages into thick diagonal pieces and arrange on a serving plate. Spoon a little of the warm broth over the top and sprinkle with the chopped parsley.
- 8
Serve hot with mustard, bread, or potatoes if desired.
