Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 3 large eggs
- 2 tbsp butter
- ¼ tsp salt
- 2 tbsp powdered sugar
- ¼ cup jam or syrup

In a medium bowl, whisk together 1 cup flour, 1 cup milk, 3 eggs, and 1/4 tsp salt until smooth. The batter should be thin, like heavy cream.

Heat a 10-inch nonstick skillet over medium heat. Add 1/2 tbsp of the 2 tbsp butter and swirl to coat the pan.

Pour about 1/4 cup of batter into the pan, tilting to spread it evenly into a thin circle. Cook until the edges look dry and the bottom is golden, about 2 minutes.

Flip the pancake with a spatula and cook the other side until lightly spotted with brown, about 1 minute. Slide onto a plate and repeat with remaining batter, adding more butter as needed.

Fold each pancake into quarters or roll them up. Dust generously with the 2 tbsp powdered sugar and serve with the 1/4 cup jam or syrup on the side.
