German Meatloaf

A quick and hearty German-style meatloaf, pan-seared and finished in the oven, served with boiled potatoes and a sprinkle of fresh parsley. Perfect for a weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 1 large egg
  • ½ cup breadcrumbs
  • 1 lb potatoes
  • 2 tbsp parsley

Instructions

    Preheat oven to 375°F. Peel and quarter the 1 lb potatoes, place in a pot with salted water, and bring to a boil. Cook until fork-tender, about 15 minutes.

    In a bowl, mix the 1 lb ground beef, 1 finely chopped onion, 1 egg, 1/2 cup breadcrumbs, and a pinch of salt and pepper. Form into a loaf shape.

    Heat 1 tbsp oil in an oven-safe skillet over medium-high. Sear the meatloaf until browned on all sides, about 5 minutes total.

    Transfer the skillet to the oven and bake until the meatloaf is cooked through (internal temp 160°F), about 15 minutes.

    Drain the potatoes and toss with the 2 tbsp chopped parsley. Slice the meatloaf and serve with the potatoes.
