Ingredients

  • 8 links bratwurst sausages
  • 3 medium, sliced yellow onions
  • 2 tbsp olive oil
  • ½ cup beef broth
  • 1 tbsp apple cider vinegar
  • 3 tbsp whole grain mustard
  • 4 pieces crusty bread or rolls
  • 1 to taste salt and black pepper

Instructions

  1. 1

Heat oil in a large skillet over medium. Add sliced onions and cook uncovered, stirring often, until deep golden and soft, ~15–18 minutes.

  2. 2

Pour in broth and vinegar. Scrape up any browned bits. Stir in mustard and season with salt and pepper. Reduce heat to low.

  3. 3

Push onions to the side of the skillet. Raise heat to medium-high and place bratwurst in the empty space.

  4. 4

Sear bratwurst without moving for 3–4 minutes until the bottom is golden brown.

  5. 5

Turn bratwurst and sear the other side for 3–4 minutes until browned all over.

  6. 6

Nestle sausages back into the onions and reduce heat to medium-low. Simmer together for 2 minutes to marry flavors.

  7. 7

Divide bratwurst and caramelized onions among bread pieces. Drizzle with any pan juices.
