Ingredients
- 8 small corn tortillas
- 1 lb ground beef
- 1 medium onion
- 2 medium tomato
- 2 cups lettuce
- 1 cup salsa
- 2 tbsp vegetable oil
- 1 tsp salt

Finely chop the 1 onion and 2 tomatoes. Shred the 2 cups lettuce and set aside.

Heat 1 tbsp of the vegetable oil in a skillet over medium-high. Add the 1 lb ground beef and 1/2 tsp salt. Cook, breaking up the meat, until browned and cooked through, about 8 minutes. Remove from skillet and set aside.

In the same skillet, add the remaining 1 tbsp oil. Fry the 8 corn tortillas one at a time, about 30 seconds per side, until they are slightly crisp but still pliable. Drain on paper towels.

Top each tortilla with a spoonful of the cooked beef, then a sprinkle of the chopped onion and tomato, and a handful of shredded lettuce.

Drizzle with the 1 cup salsa and serve immediately. Add optional hot sauce or lime wedges if you like.
