Ingredients

  • 1.5 lbs zucchini
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ cup parmesan cheese, grated

Instructions

    Slice zucchini lengthwise into 1/4-inch-thick planks.

    Heat 1.5 tbsp oil in a large skillet over medium-high until shimmering.

    Sear half the zucchini without stirring until edges brown, 2–3 minutes per side.

    Transfer to a plate; repeat with remaining oil and zucchini.

    Add garlic to the pan, stir for 30 seconds until fragrant, then return all zucchini.

    Toss to coat, scatter parmesan over top, and serve hot.
