Ingredients

  • 1.5 lbs littleneck or manila clams, cleaned
  • ¾ cup dry white wine
  • 6 cloves garlic, minced
  • ¼ cup fresh cilantro, chopped
  • 4 slices crusty bread, sliced
  • 1 whole lemon, cut into wedges

Instructions

  1. 1

Heat 2 tbsp olive oil in a large skillet over medium-high heat, about 60 seconds until it shimmers.

  2. 2

Add minced garlic and cook for 30 seconds, stirring constantly, until fragrant but not brown.

  3. 3

Pour in white wine and bring to a simmer, stirring once to deglaze the pan.

  4. 4

Add clams, cover the skillet, and cook for 6–8 minutes until shells open. Discard any that don't.

  5. 5

Remove from heat, stir in cilantro, and season with salt and black pepper to taste.

  6. 6

Serve clams in bowls with broth, crusty bread on the side, and a lemon wedge for squeezing.
