Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 3 cups fresh spinach, roughly chopped
  • 3 cloves garlic, minced
  • ½ cup Parmesan cheese, grated

Instructions

    Boil salted water in a large skillet, then add pasta and cook until al dente, about 9 minutes.

    Reserve 1 cup pasta water before draining; return empty skillet to low heat with 2 tbsp oil.

    Add minced garlic and cook until fragrant, about 30 seconds.

    Toss spinach into the skillet and stir until wilted, about 1 minute.

    Return drained pasta to the skillet with 0.5 cup pasta water and Parmesan, tossing until creamy.
