Ingredients

  • 1 large egg yolk
  • ¼ tsp saffron threads
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • ¾ cup neutral oil
  • 1 lb large shrimp, peeled and deveined

    Steep saffron threads in 1 tbsp warm water for 2 minutes to bloom. Whisk egg yolk, minced garlic, and lemon juice in a bowl until pale.

    Whisk in the saffron water, then add oil drop by drop while whisking constantly until the aïoli is thick and glossy, ~4 minutes.

    Season aïoli with salt and pepper to taste. Transfer to a small serving bowl.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering. Pat shrimp dry and season generously with salt and pepper.

    Sear shrimp in a single layer without moving them for 2 minutes until edges turn opaque, then flip and cook 90 seconds more.

    Serve shrimp hot with the saffron aïoli on the side for dipping.
