Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 whole lemon (zested and juiced)
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 large red bell pepper, cut into 1-inch chunks
- ½ medium red onion, cut into 1-inch chunks
- ½ cup whipped feta or Greek yogurt, for serving

Preheat oven to 450°F. Pat shrimp dry with paper towels.

Whisk together lemon zest, lemon juice, minced garlic, olive oil, oregano, salt, and pepper in a bowl.

Thread shrimp, bell pepper, and red onion alternately onto 4 skewers. Brush with the lemon-garlic marinade on all sides.

Spread skewers on a sheet pan. Roast for 10-12 minutes until shrimp is opaque and edges are charred.
