Sheet-Pan Lemon Garlic Shrimp Souvlaki

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 whole lemon (zested and juiced)
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 large red bell pepper, cut into 1-inch chunks
  • ½ medium red onion, cut into 1-inch chunks
  • ½ cup whipped feta or Greek yogurt, for serving

Instructions

    Preheat oven to 450°F. Pat shrimp dry with paper towels.

    Whisk together lemon zest, lemon juice, minced garlic, olive oil, oregano, salt, and pepper in a bowl.

    Thread shrimp, bell pepper, and red onion alternately onto 4 skewers. Brush with the lemon-garlic marinade on all sides.

    Spread skewers on a sheet pan. Roast for 10-12 minutes until shrimp is opaque and edges are charred.

    Dollop whipped feta on a serving plate. Slide the souvlaki off skewers onto the feta.

    Serve immediately with warm pita and lemon wedges.
