Garlic Pork with Rice

A quick and satisfying Thai-inspired weeknight dinner: crispy-edged pork mince stir-fried with plenty of garlic, served over steamed rice and topped with a fried egg. Simple, savory, and ready in about 30 minutes.

Ingredients

  • 1 cup jasmine rice
  • 1 lb pork mince
  • 6 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 2 large eggs
  • 3 tbsp vegetable oil

Instructions

    Cook the 1 cup jasmine rice according to package directions; keep warm.

    Mince the 6 garlic cloves and set aside. In a small bowl, mix the 2 tbsp soy sauce, 1 tbsp oyster sauce, and 1 tsp sugar.

    Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add the garlic and stir-fry until fragrant and lightly golden, about 30 seconds.

    Add the 1 lb pork mince and break it up with a spatula. Cook, stirring occasionally, until browned and crispy at the edges, about 6-8 minutes.

    Pour the sauce over the pork and stir to coat. Cook for 1 minute until the sauce is absorbed and the pork is glossy.

    In a separate nonstick pan, heat the remaining 1 tbsp oil over medium-high. Fry the 2 eggs sunny-side up until the whites are set and the edges are crispy, about 3 minutes.

    Divide the rice between two plates, top with the garlic pork and a fried egg. Garnish with sliced red chili and fresh cilantro if desired.
