Ingredients

  • ½ lb pork shoulder, sliced 1/4 inch thick
  • 4 cloves garlic, minced
  • ¼ cup white wine or white vinegar
  • 1 whole bay leaf
  • 2 whole crusty rolls or ciabatta
  • 2 tbsp olive oil

Instructions

  1. 1

Heat oil in a 10-inch skillet over medium-high until it shimmers, about 1 minute.

  2. 2

Add pork slices in a single layer. Sear without moving for 2 minutes until edges turn golden brown.

  3. 3

Flip pork, add garlic and bay leaf, stir briefly until fragrant — about 30 seconds.

  4. 4

Pour in wine, scrape any browned bits from the pan bottom, and simmer 2 minutes until sauce reduces.

  5. 5

Taste and season with salt and black pepper. Toast or split rolls if desired.

  6. 6

Pile pork and sauce onto rolls. Serve immediately while the meat is hot and juicy.
